Banana Muffins

I made muffins last night, just because. The thing about baking on a whim is that sometimes you realize you don’t have all the ingredients…and it’s raining outside. So, you make do…and end up with such delish muffins! I thought I’d share my make shift recipe.


3-4 ripe bananas
1/2 cup yogurt (I used vanilla because it’s all I had…this is part of a baking powder substitute)
1/2 cup brown sugar (I was out of white, yes really)
1/3 cup melted butter or margarine
2 egg whites (because I used the egg yolks for pie, or creme brulee…of course)
1 1/2 cup flour
1 1/2 tsp baking soda (part of this is substituting baking powder)
1/2 tsp salt
1/2 tsp cinnamon

In a bowl mash up bananas, mix in yogurt, sugar, butter and egg. In another bowl mix flour, baking soda, salt and cinnamon. Mix together. Preheat oven to 350F. Scoop batter into well greased muffin tin (because those little papers are wasteful) bake for 25ish minutes.

Optional: use Nutella as icing. Add nuts.
